I've certainly seen more than this, but I figured I'd update this list with some of my thoughts for the TV series I've watched and am currently watching.

Star Trek: Voyager
I enjoyed this series. They could have done more with the stranded part making it a little more rough, but the cast and series worked well.
Elementary
I loved the way the show's creators brought about Sherlock Holmes meets New York City.
In-Between Seasons

Star Trek: Picard
The 3rd season was definitely the best. So much nostalgia with a good story. I enjoyed the first 2 seasons, but they didn't match what season 3 brought to the screen.
The Office
The first seasons were definitely the best, but it was a fantastic series with a great mix of humor.
Obi-Wan Kenobi
This was a great way to bridge Revenge of the Sith with A New Hope. It was nice to see Ewan McGregor back as Obi-Wan.
Frasier
Enjoyed the character interaction between everyone.
The Expanse
This was a fantastic series. Did a pretty good job with matching the books, but sadly it ended too soon.
Meltdown: Three Mile Island
While I'm sure there's truth to parts of this, it sometimes felt a little bit more on the conspiracy theory side.
The Middle
A great mix of humanity and humor with a good cast.
30 Rock
Alec Baldwin and Tina Fey were amazing in this.
Scrubs
I loved this show. Was funny and probably gave a better idea of how the health system works.
Person of Interest
The cast for this was amazing and the story was always keeping things interesting.
Lost
While I'm not quite sure I understood the ending, this was a fun series to watch.
Game of Thrones
I really wish I could separate this between what was written and what was made up. The first several seasons were amazing. The last few...not so much.
Parks & Recreation
Nick Offerman and Amy Poehler really made this. Would highly recommend as it's a great mix of humor and good story telling

Sherlock
This was a fantastic interpretation of Sherlock Holmes. Benedict Cumberbatch as Holmes and Martin Freeman are amazing.
Star Trek: Enterprise
I recently watched this again with my wife. It reminded me how much it sucked that it was cancelled after only 4 seasons. They could've done so much more. The first two seasons were shaky, but it finished strong and was still a good series.

Star Trek: Deep Space Nine
This by far is my favorite Star Trek series. The way the characters are developed is amazing and there are so many great stories within the series. It was also the first Star Trek series to have a full storyline.
Star Trek: The Next Generation
The quintessential Star Trek. It was an amazing series that I constantly get more out of everytime I re-watch it

The series where it all began and what got me into Star Trek. Some of the effects are corny for today's standards, but the series still holds up
