Week Notes forJune 7 - 13 (#103)

It was a quick week. It felt like it was all hockey...which it was.

Too Much Hockey

If there ever was such a thing, it was personified as this week. Originally I was going to do the I-League practice sessions Monday to get some reps in net, and then play 2 games Friday for the 2 other teams I play for. Well, that changed when I was asked to fill in both Wednesday and Thursday for other teams that were short a goalie and needed a sub. I ended up playing Monday, Wednesday, Thursday, & Friday. My legs were happy Saturday morning when it was all over.

Tilapia with Salsa Verde

I've made this a few times before. I think I saw Alton Brown in an episode of Good Eats use Salsa Verde as a topping for tilapia and you know what, I think it pairs well. I just season tilapia fillets with salt and pepper and bake them for 10-12 minutes at 375°F. Dress each fillet 1-2 tablespoons of Salsa Verde and serve. Goes well with some potatoes and a vegetable like zucchini or asparagus.
